Recipe : Stilton Turkey Burgers

I've been cooking again :)

I originally planned to follow the Weight Watchers recipe for Chicken Burgers with Crumbled Blue Cheese, but as is becoming the norm I made a few changes.



The recipe was flawed from the start as they didn't have any mince chicken in my local Tesco, so I settled for Turkey instead.

I used:
633g of Turkey Mince, approx 50g of Blue Stilton, 30g / 1/4 cup of breadcrumbs, 1 Dorot Chilli cube, 2 Dorot Garlic cubes, 4 finely sliced red onions, part baked Ciabatta rolls.

The method:

Pre-heat your grill to a medium heat.
Add turkey, breadcrubs, onions, cheese, garlic and chilli into a bowl...

Combine the ingredients *hint wet your hands to prevent sticking*


and separate into four thick patties...


Place under the grill, turning occasionally, until fully cooked. Mine took approximately 30 minutes but this does depend on the thickness. I suggest cutting the burgers in half to check that they are cooked through.


Serve the burgers in your Ciabatta rolls, add any sauce/salad that you require...


Enjoy!! 


The original Weight Watchers recipe gives 9 Pro Points for each burger, I think mine will be slightly less as I skipped the sauces out and used Ciabatta rolls.

This is the first time that I've made burgers and I can't believe how quick and easy it was! I'm now super excited for the 2012 BBQ season!

This post is a day later than usual because I was suffering from a horrific hangover yesterday. My girls night in turned into a bit of a crazy house party when Spencer bought half of the pub back with him! I really need to learn my limit when it comes to alcohol. I seem to think that I am invincible and just carry on drinking! Two bottles of wine and some MOET later I really wasn't invincible! Still suffering today.

A Day in Weight Watchers & Weekly Progress #02

Weigh day, eek!! This week has not been good, I've totally gone off the rails with food and alcohol this past week!

This week I weighed in at 12 st 2 lb which is a total weight loss of 6 & 1/2 lbs. I'm super impressed that I've managed to lose weight despite the awful food/alcohol that I've consumed! I had a limited edition triple chocolate Mars bar to celebrate, that is how good I am at dieting haha! It was amazing though!

I did have a good day on Monday (possibly the only good day in the whole week!) Here is what I ate:

 7.50 am Weight Watchers Yoghurt 2 Pro Points
Banana 0 Pro Points

 9.45am Tesco Light Choices Apple & Raisin Slices 3 Pro Points

10.50 am banana 0 Pro Points

 1.15 pm Tesco Light Choice Minced Beef & Potatoes meal 5 Pro Points

 1.35 pm Weight Watchers Chocolate Biscuit bar 2 Pro Points
4 pm another of the above! 2 Pro Points



7 pm Cod, cheese & chive fishcake 9 Pro Points
Two portions of Weight Watchers Spring Onion mash 4 Pro Points
Runner Beans 0 Pro Points

I also had one cup of coffee using the Nescafe 3 in 1 sachets - 2 Pro Points

Total points : 29/29


A Day in Weight Watchers & Weekly Progress #01

As you may or may not be aware I am currently following the Weight Watchers diet plan. I went to my first Weight Watchers meeting on 31 August 2011. I have been following the Pro Points plan quite strictly from Monday to Friday but have gone off plan every weekend since joining.

I have been allocated 29 daily Pro Points and 49 extra weekly Pro Points which I can use whenever I like throughout the week, most people save these up for alcohol/meals on the weekend. I've got drunk every weekend since joining and have lost count, but am pretty sure that I have gone over the extra 49 points both when drinking and when eating those hangover munchies!

To date I have lost 5 pounds, which is pretty good for four weeks in and having fun weekends!

I'm not attending the meetings as to be honest I can't really afford the £20 a month that it will cost me, I do however highly recommend attending the meetings if you want to follow the plan as they are great for motivation and sharing recipes.

I weigh myself every Wednesday so I have decided that I will post every week telling you how much weight I've lost or gained and share my meals from one day in the past week. I'm hoping that sharing my weight with you guys will help motivate me and that you'll enjoy the posts!

Today I weighed in at 12st 3 & 1/2 which means that I have lost 1 & 1/2 pounds this week.

8am Weight Watchers Raspberry Yoghurt 1 PP

10am Weight Watchers Ginger & Dark Chocolate Bar 2 PP

11.30am Weight Watchers Caramel Wafer Bar 2 PP


1.30pm Tesco Light Choices Chicken Curry with Rice 11 PP (these Tesco meals are good if you are on the Weight Watchers plan as they have the Pro Point values on the packs so no calculating points!)
Can of Diet Coke 0PP

7.30pm Findus Roasted Chicken Breast in a sun dried tomato dressing with potatoes, peppers & courgettes 9 PP


8.30pm Weight Watchers Rice Pudding 3 PP
Can of Diet Coke 0 PP


Total points used 28/29

As you can see Weight Watchers is fairly easy to follow, you don't even have to cook if, like me, you really can't be-bothered when working all day!


Recipe : Mini Peanut Butter Oreo Cheesecakes

I stole this recipe from Charlene a while ago and completely forgot to share it with you! These are probably the nicest cakes I have ever made! Chocolate, peanut butter, cheesecake - what's not to like?

I attempted to work out the Weight Watchers Pro Points for these, my rough estimate is 5 PP per cake, which isn't actually too bad, I think I may have worked it out wrong haha. I need to get myself a Weight Watchers scales so that I can work these points out accurately.

Anyway, who cares about dieting when there are cakes as good as these to be made! Onto the recipe...

To make 12 cakes you will need:
2 Packets of Oreos, 12 for the bases and 6 for crushing over the top (you will have some spare to eat while waiting for the cakes to bake)
250g of Cream Cheese (I used extra light Philadelphia - got to attempt to be good somehow!)
65g Granulated Sugar
110g Peanut Butter
1 Large Egg

1. Preheat the oven to 350 Degrees F (gas mark 4). Fill a try with 12 paper cases and place an Oreo in each case.

2. Beat the cream cheese and sugar together until light and fluffy, this takes around three minutes.

3. Add in the peanut butter and beat until combined.

4. Add in the egg and beat until combined.

5. Place some of the mixture on top of each Oreo, as you can see, you don't have to be neat!

6. Break up six Oreos and press them into the mixture.

7. Bake for 20 - 25 minutes on the middle shelf until the edges are turning golden.
